Artichoke and Spinach Pizza
Adapted from Dinner: A Love Story
1 tablespoon olive oil
1-2 cloves of garlic, pressed
1 20 oz. store bought pizza dough, at room temperature (takes about 1 hour)
1 14 oz. can of artichoke hearts (high in fiber and antioxidants), drained and roughly chopped
2 handfuls of spinach, tear into pieces to increase antioxidant content
¼ cup mayonnaise
¼ cup parmesan, grated
Press garlic and let sit for 10 minutes.
Heat oven to 475 degrees.
Lightly dust pizza stone with flour and stretch dough over it. I’ve found it is easiest to work your way around and around the dough with it hanging in the air stretching the edges (let gravity help you!). Periodically lay it down on the stone to see if it needs more stretching.
Drizzle olive oil over the dough and use the back of a spoon to spread all over dough, right to the edge. Sprinkle on the pressed garlic and spread all over dough.
In a bowl, mix together the artichoke hearts, spinach, mayonnaise and parmesan. Spread atop the dough. If desired, top with fresh mozzarella. Bake for about 12-15 minutes, until the crust is lightly brown on the edges and cooked through. Move to a cutting board and serve up with a simple salad.
