Easy Green Smoothie
If you're like us, it can be hard to always get the right nutrition in the morning. Eggs become boring and limited. Toast just isn't enough. When you talk about starting your day off right, the best thing you can do is get some of your daily fruit and vegetable servings in right away. Giving your body a mix of fruit, greens, protein, and other nutrients is simple when making smoothies. It is also a lot easier and more flexible than making something different for breakfast every morning.
This Easy Green Smoothie is so simple to put together. We like to make 4 servings in the afternoon or evening. This way, you'll be set in the morning for the next couple of days. We were super excited to see that Bob's Red Mill came out with a clean, vegan protein powder and this was the first thing we tried it in. Also, be sure to leave skins on for apples, pears, stonefruit, and other easily digestible fruit...that is where at least 30% of the nutrients are!
1 bunch of greens (kale or chard) or about 4 oz baby greens (beet greens, spinach, etc)
2 scoops protein powder (we prefer plant based proteins with little to no flavor)
1 lemon, cut off both ends. Leave peel on, cut into quarters and remove seeds. Yes, leave the remainder of the peel on.
1 mango peeled and cut or 1 cup of another fruit (berries, pear, apple, banana)
2 cups coconut water (slightly more if you prefer or are having trouble getting everything to blend)
Put all ingredients in a blender in the order listed above and blend on high for at least a minute. You'll really want to let the blender liquify everything for a while to make this come out smooth. Store in mason jars with lids on and take them out of the fridge when you wake up! You'll be glad you had this smoothie for breakfast the whole rest of the day!
